A six-inch cake for eight. Chill it fully; the refrigerator performs the final stage.

*Cornstarch is naturally gluten-free, but check every packet if medically required. Scaling changes quantities, not tin size or baking time; use two tins for 2×.
Method
- Heat the oven to 175°C conventional / 160°C fan. Line a 15 cm / 6-inch springform tin with parchment.
- Whisk the yogurt with the sugar, vanilla, lemon zest and salt until smooth.
- Mix in the eggs one at a time, whisking gently to avoid excessive air.
- Sift in the cornstarch and whisk only until no lumps remain. Pour into the tin.
- Bake for 45–60 minutes, until the rim is set and golden while the centre retains a soft wobble.
- Cool in the tin for 30 minutes, then refrigerate for at least 4–6 hours.
- Roughly mash half the berries. Fold in the rest with the chia and lemon juice; chill for 30 minutes.
- Take the cake out 15 minutes before serving. Add the fruit and slice with a warm, dry knife.
Do not bake until the centre is rigid. Carry-over heat and chilling finish the set; a firm centre in the oven becomes rubbery.
The cake rises, sinks and wrinkles. A chilled slice holds cleanly but trembles slightly, between cheesecake and flan.
